Turkey Rice Soup


What you need:

1 pkg turkey thighs (about 2lbs)

2 carrots chopped small

1 large onion diced small

2 stalks of celery died small

10 cups of water

2 cups of precooked rice

What to do:

In a large pot put your turkey thighs and cover them with the water.

Bring to boil and then simmer for 5 hours on low.

Remove the turkey thighs and cool so you can break the meat apart.

While your turkey is cooling measure your remaining broth from the pot and make sure it still measures to 10 cups, if it dosnt add more water.
(the flavor will be good so dont worry about watering it down.

Next put all your chopped veggies into the broth and bring to a boil again.

Making sure your veggies are tender go ahead a add your turkey meat back in and add your rice.

Cook on low for 25 minutes and then serve.

*I dont add salt or anything to this recipe but you can add pepper and salt if you need it.

Enjoy.

Vegan Corn Bread

What you need:

2 cups cornmeal
1 cup unbleached flour
2 tsp baking powder
1/3 cup canola oil
2 tbsp pure maple syrup
2 cups soymilk
2 tsp apple cider vinegar
1/2 tsp salt

What to do:

Heat oven to 350 degree and spray baking dish.

In bowl mix together soymilk and vinegar and set to side.

In seperate bowl sift together the dry ingredients.

Now add the oil, syrup and the soy mix wisk together for 3 mins til bubbly.

Now combine your wet ingredients with your dry ones mixing til well combined.

Now pour batter into your baking pan and bake for 40 mins or till knife comes out clean.

Take out and cool slightly.

*Some people drizzle honey on this its really good.

My Vegan Mushroom Gravy

What you need:

1/2 ounce dried porcini mushrooms (about 1/2 cup)
1 cup water
1/4 cup vegetable oil
4 oz mushrooms stems trimmed and sliced
Kosher salt
Freshly ground black pepper
1 bay leaf
1 medium shallot diced
1/4 cup red wine
1/3 cup flour
2 cups mushroom broth
1 tbsp low sodium soy sauce

What do to:

Place dried mushroom in a bowl and put boiling water over let sit til soft.

Then take rehydrated mushrooms and finely chop them and set to side

Take about 3/4 of the soaking liquid and set to the side.

Toss any remaining liquid.

Heat oil in pan add your mushrooms and season cook for 5 mins and set to side.

Add remaining oil to pan add shallots and re-hydrated mushrooms, bay leaf cook for 5 mins.

Add wine and cook down til it evaporates.

Put flour in pan an stir for about 3 mins.

Whisk in your broth,soy sauce and soaking liquid.

Simmer stirring til gravy has thickened.

Season again tasting it as you go.

Serve.

Pumpkin Spice Cake

What to do:

2 cups canned pumpkin
3 cups sugar
1 cup water
1 cup vegetable oil
4 eggs
3 1/3 cups flour
2 tsp baking soda
2 tbsp pumpkin spice(has everything you need in it, more if you like)
1 tsp salt
1 tsp baking powder

What to do:

Pre-heat the oven to 350 degrees. Grease 2 loaf pans.

In a large bowl combine pumpkin, sugar, water, oil and eggs. Mix well.

In a separate bowl sift together flour, baking soda, baking powder, salt, pumpkin spice.

Slowly mix the dry ingredients with the wet ingredients beating until well blended.

Pour in 2 loaf pans evenly dividing batter between the two.

Bake at 350 degrees for one hour.

*If knife comes out clean(if not bake 10 more mins), take out and cool.

Stuffed Shells

What you need:

1lb ground beef
1 large onion diced
1 clove of clove minced
1 bag shredded mozzarella cheese
1/2 cup Italian breadcrumbs
1/4 cup fresh parsley chopped
1 egg beaten
1 jar of spaghetti sauce (or you can use my Italian tomato sauce recipe)
1/2 cup grated Parmesan cheese(I like to use fresh)
18 jumbo pasta shells(cook according to package)
salt and pepper

What to do:

Cook shells according to package directions.

Meanwhile in a pan brown ground beef,garlic and onion.(drain fat completely, let cool)

Preheat the oven to 400 degrees.

Combine meat, mozzarella cheese, egg, breadcrumbs, chopped parsley and season with salt and pepper.

Pour tomato sauce into bottom of a oven safe dish covering the bottom with a quarter of the sauce.

Stuff the shells with meat mix, then place into sauced dish.

Pour remaining sauce over the shells.

Dust it with Parmesan and mozzarella cheese.

Bake in the oven for 20-25 minutes or til the cheese has melted.

*You can do many differences to this recipe, the only thing I suggest is when you put it in the oven you really don't have to make sure it browns just make sure it is melted.

Shrimp Scampi

What you need:

2 lbs raw Jumbo shrimp peeled & deveined
1lb angel hair pasta
1 cup butter
2 shallots finely chopped
8 garlic cloves finely chopped
1/3 cup white wine
3 tbsp fresh lemon juice
1/4 cup fresh parsley rough chop
1/4 tsp ground sea salt
1/8 teaspoon freshly ground black pepper

What to do:

Cooking angel hair pasta according to your preferred taste making sure you salt and put olive oil in water. ex: Al dente
Meanwhile, melt 1 cup of butter in a skillet.

Add in shallots and garlic and cook be careful not to burn them.

Add shrimp and cook over medium heat til they are pink make sure you flip

Add wine, lemon juice, parsley, salt and pepper.

Cook them for 4 more minutes and pour your mixture over angel hair pasta.

I can almost imagine the looks your loved ones give you when they are done enjoying this fabulous dinner.

Pepper Steak

What you need:

1 pound flank steak sliced into 1in strips (You can also but the strips already cut)
2 tsp ginger sliced (I like to do this in strips,it give a better bite)
2 scallions rough chop
2 tbsp vegetable oil to cook in
1 onion sliced into strips
2 green bell peppers sliced into strips
4 garlic cloves roughly chopped
1 cup freshly sliced mushrooms

Marinade:

1/4 cup soy sauce
2 tbsp rice wine vinegar
1 tsp sugar
1/4 cup water
2 tbsp corn starch(this will help thicken your sauce)
2 tbsp vegetable oil

What to do:

Marinate your sliced steak overnight I find that it really makes the meat tender when you cook it.
Add oil to your pan (if you have a wok, it works,but I have a big pan) Add garlic, ginger, and scallions. Saute for about 30 secs.
Add about half of the steak, and saute for 3 minutes. Remove from pan and set aside. Put the other half in and remove and set aside also this should be done in batches so you don't over fill your pan/wok. (* you need to reserve the marinade, this is what will make your sauce at the end)
Add oil and saute mushrooms, onions, and peppers for 2 minutes. Push vegetables to the sides of your pan.
Pour marinade into the center and stir until thickened and bubbly. Blend in vegetables, add steak and heat thoroughly about 5-7 mins.(I like to wait so all the flavors all come together.

Chicken Ceasar Wraps

Now this is such a quick recipe that I wanted to share it. Not to mention absolutely yummy and my boyfriend and I enjoy this so much. That we will eat it almost once a week. You can tweak this to your liking.

What you need:
Caesar dressing(Homemade of course)
1/4 cup mayonnaise
1/4 cup grated parmesan cheese
2 tbsp fresh lemon juice(careful not to get seeds in it)
1 tbsp Worcestershire sauce
1 tbsp Dijon mustard or seeded mustard(whatever you prefer)
1 garlic clove (minced)
1/4 cup olive oil
Other-
1 2 lb roasted chicken (either store bought or your own depending on if you want quick or all homemade, skinned and bones discarded, meat removed and shredded into bite-sized pieces, I like to keep the bones to make a chicken stock)
1 romaine lettuce heat (turn into bite-sized pieces)
4 (10 inch) spinach wraps

What to do:
In a large bowl whisk together mayonnaise, Parmesan cheese, Worcestershire sauce, lemon juice, Dijon mustard or seeded mustard and garlic. Whisk in the olive oil, slowly and little a time until well incorporated.
Add the chicken and lettuce to the bowl and toss with the dressing. Divide the salad mixture evenly among the tortillas Roll up and secure with a tooth pick.

Serve with chips or if you want to just keep it simple you can do that also.

Pad Thai Chicken

This is one of my other favorite indulgences is Thai and Asian foods. So I had to share this on here and I hope you enjoy this as much as I did. Its very light also. Enjoy this and as always tweak to your liking. I will also be posting some of my favorite sushi recipes this is also fun for me to make whenever I can. Hope you love this recipe as much as me.

What you Need:
9 ounces pad Thai rice noodles
3/4lbs boneless skinless chicken breasts (cut into small cubes)
1 1/2 tbsp soy sauce ( you can use Low sodium also)
4 garlic cloves (minced)
1 fresh green chili pepper diced
1 tbsp of ginger (grated)
4 green onions sliced
1 egg
2-3 cups beans sprouts
1/3 cup dry roasted peanuts (roughly chopped)(dont use if your allergic,Obviously)
1 fresh lime (sliced into wedges)
2 tbsp vegetable oil
Pad Thai Sauce—
1/3 cup chicken stock
3 tbsp rice vinegar (dont use white vinegar its not the same)
1 tbsp lime juice
4 tbsp brown sugar
2 tbsp fish sauce (this stuff really smells, I wouldn't put my nose to it, but its very flavorful)
1 tbsp soy sauce (can use low sodium)
1/8 tsp white pepper

Place the prepared chicken into a medium bowl and toss with 1 1/2 tbsp of soy sauce. Set aside. In a small bowl combine chicken stock, rice vinegar, lime juice, brown sugar, fish sauce, soy sauce, and white pepper. Set aside.
Bring a large pot of water to a boil. Add the rice noodles and turn off the heat. Allow the noodles to soak for about 6 minutes or until soft enough to bend easily but still firm and undercooked. Drain and rinse the noodles briefly with cold water.
Heat a wok or large frying pan over medium-high heat make sure its hot try the dancing water method to be sure sprinkle a little to make sure it pops being careful not to burn yourself. Add the vegetable oil and swirl around. Add the garlic, chili pepper, ginger, and half of the green onion. Stir-fry for 1 minute. Add the chicken and stir-fry for 3-4 minutes or until fully cooked.
Push the ingredients to the side in the wok and crack an egg into the center of the pan. Stir quickly to scramble the egg and then combine it with the other ingredients. Add the prepare noodles and 3-4 tablespoons of the pad Thai sauce. Using two utensils lift and turn the noodles to stir-fry and combine with the other ingredients. Using this method, continue cooking while adding more sauce every minute or two, until all of the sauce has been added and the noodles are cooked through and a little bit sticky (about 8-10 minutes). Fold in the bean sprouts. Remove from heat. Garnish with lime wedges, remaining green onion, cilantro, and peanuts(again dont use this if you allergic)

Philly Sloppy Joes

Now me being a Jersey Girl at heart and born and raised there I had to share this recipe. You can tweak it how ever you want its up to you. I hope you enjoy it as much as me. This fed me and my boyfriend and we even had leftovers.

What you need:
1 tablespoon extra virgin olive oil
1lb ground beef
1 medium onion (chopped)
1 medium green bell pepper (seeded and chopped)
1/4 cup steak sauce
1 cup beef broth
salt and ground black pepper (to taste)
4 hamburger buns
1 tablespoon butter
1 tablespoon flour
1 cup milk
1 cup provolone cheese (shredded)

What to do:
Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook while breaking the ground beef up into chunks with a spatula or spoon until browned. Add the green bell pepper and onion and cook for 3-4 minutes, until the onions start to become tender. Drain an excess liquid. Stir in steak sauce and beef broth, season with salt and pepper. Bring to a boil and cook until the mixture is thickened and bubbly.
While the meat is cooking, split the hamburger buns and butter each of the cut sides. Heat a large skillet to medium heat. Place split hamburger buns cut side down into the skillet and cook until lightly browned on the bottom. Remove from the pan and set aside.
melt butter in a medium skillet over medium-high heat. Stir in flour and cook for 1 minute. Whisk in milk and cook until the mixture is thickened and bubbly. Remove from heat and stir in the cheese until it is melted and incorporated into the sauce.
To assemble sloppy joes- pile the meat mixture onto the top of the bottom half of each bun, top with the provolone cheese sauce, and place the top half of the hamburger bun onto the sandwich.

Jamaican Coco Bread



Now with the Jamaican patties this bread is usually wrapped around it and gives it a nice flavor & crunch. Now mine didn't come out right the first time and I tried 2 times before it came out really yummy. So see what you can do with it. I wish you luck.

What you need:
2 packets yeast
1 tsp sugar
1/4 cup warm water
1 medium egg
1 cup warm milk
1 tsp salt
3.5 cups white flour
1/2 cup melted butter

What to do:
Mix the yeast, sugar and water together.
Beat the egg and stir in to the mixture.
Stir in the milk and salt.
Stir in 2 cups of the flour.
Slowly add more flour, stop when the mixture becomes stiff.
Knead the dough until it is smooth - this should take about 10 minutes
Transfer the dough to a clean bowl and some of the melted butter.
Roll the dough around the bowl until it is entirely coated in butter.
Cover with a damp towel for 1 hour (this will allow the mixture to rise).
Divide the dough in to 10 pieces and roll each piece in to a circle, about 1/2 cm thick.
Brush the dough with melted butter then fold in half.
Preheat your oven to 425 degrees.
Place folded pieces on a well greased sheet and place on the bottom rack of the oven.
Bake until golden brown (this should take around 15 minutes).

Jamaican Patties


Now this was the other recipe that we used for the beef patties. A close friend gave me this recipe and he is from May Penn, Jamaica so I was happy to accept. I hope you love this recipe as mach as we did, this is also part of Jamaican night. This is a 3 part recipe.

1. What you need for the pastry:
1lb flour
1/2 cup ice cold water
1/2 cup melted butter
1/2 cup shortening
1 tsp salt
1 Teaspoon of baking powder
1 Teaspoon of curry powder medium hot
1 Teaspoon on turmeric

2. What you need for the filling:
1lb ground beef
1 medium onion
4 scallions
2 stalks fresh thyme or 2 tsps ground thyme
1/2 cup breadcrumbs
1 tbsp curry powder / chilli sauce(scotch bonnets are hard to find)
2 cloves garlic
1 cup water
1 tsp salt
1 tsp pepper
1 tsp paprika
1/2 tsp sugar
1 teaspoon nutmeg

Next I will tell you how to prep

1. What to do for pastry:
Sieve flour
Stir in baking powder, curry powder, salt and turmeric
Work the butter and shortening in with fingertips until mixture resembles breadcrumbs
Slowly drizzle in the water until the mixture has a dough-like consistency (it should only be slightly sticky)
Roll the dough in to a ball
Wrap in cling film and place in the fridge for 1 hour
