Now this is such a quick recipe that I wanted to share it. Not to
mention absolutely yummy and my boyfriend and I enjoy this so much. That
we will eat it almost once a week. You can tweak this to your liking.
What you need:
Caesar dressing(Homemade of course)
1/4 cup mayonnaise
1/4 cup grated parmesan cheese
2 tbsp fresh lemon juice(careful not to get seeds in it)
1 tbsp Worcestershire sauce
1 tbsp Dijon mustard or seeded mustard(whatever you prefer)
1 garlic clove (minced)
1/4 cup olive oil
Other-
1 2 lb roasted chicken (either store bought or your own depending on if
you want quick or all homemade, skinned and bones discarded, meat
removed and shredded into bite-sized pieces, I like to keep the bones to
make a chicken stock)
1 romaine lettuce heat (turn into bite-sized pieces)
4 (10 inch) spinach wraps
What to do:
In a large bowl whisk together mayonnaise, Parmesan cheese,
Worcestershire sauce, lemon juice, Dijon mustard or seeded mustard and
garlic. Whisk in the olive oil, slowly and little a time until well
incorporated.
Add the chicken and lettuce to the bowl and toss with the dressing.
Divide the salad mixture evenly among the tortillas Roll up and secure
with a tooth pick.
Serve with chips or if you want to just keep it simple you can do that also.
